Why when I go looking for a needle bearing u-joint with 3/4" X 5/8" bore there are none available 3/4" and up no problem.

Check the stockcar and street rod places, I see Sweet mfg makes a 3/4 smooth x 5/8-36 spline joint. Grab one of these and skim the splines out of the 5/8" end.

You might look at the joints used on some steering shafts. I used one from a Ford of some sort on a project a couple years ago. I think the bore was 5/8".
