I know it's hard to compete with lamb, goose, and other unmentionables, but having gone through many sausage recipes over the years, I haven't found anything to beat good 'ole Jimmy Dean's claim to fame for everyday breakfast sausage:

You'll find it about halfway down. Have tried all three flavors, and I guess I lean a little toward the Hot. Has a bit more flavor.
